Tom Kitchin in our Kitchen

We, at the Swilcan Restaurant in the Links Clubhouse, recently hosted a wonderful event showcasing the new Tom Morris collection and had a world renowned chef amongst our ranks.

The occasion was the showcase of the award-winning Tom Morris collection to special guests from across the world and their dinner for the evening was nothing short of spectacular!

We were hugely privileged to work alongside multi Michelin-starred chef, Tom Kitchin, and his talented team in our very own kitchen. Tom, for anyone who doesn’t know, is a critically acclaimed chef and restaurant owner from Edinburgh. He is perhaps most famously known as being the youngest ever chef to be awarded a Michelin star for his restaurant The Kitchin, and has become a regular on our TV screens, appearing on the likes of Masterchef and Great British Menu as an expert judge.

Tom’s cooking style is influenced by French techniques combined with an appreciation of the best quality ingredients from Scotland’s fantastic natural larder; something which we at St Andrews Links whole-heartedly agree with.

Tom provided all of the ingredients for the evening and brought a team of three chefs to work alongside our kitchen, waiting and bar staff.

Before dining in the Swilcan Restaurant, the guests were given a tour of the new Tom Morris building and treated to cocktails and canapés. Our very own creation, the Tom Morris cocktail was on offer and went down extremely well with the assembled guests, who were then escorted to the Links Clubhouse for their much anticipated dinner.

Now for the good bit… After some mingling and champagne, dinner was served. The starter was hand-dived scallops from Orkney wrapped in pastry, followed by fillet beef Wellington from Aberdeenshire and for dessert, a trio of Scottish rhubarb including Crowdie Cheesecake. The guests were even given a map of Scotland to show exactly where each of their ingredients had come from.

Having worked at the event I can tell you that it was a huge success and everybody had a thoroughly enjoyable time, including all of the staff who were blown away by the standards of Tom and his team.
